Remember ages ago when I shared this recipe for Cake Batter Chocolate Chip Cookies, and told you that a cake batter truffle recipe was imminent? Yea well…. 2 months later isn’t exactly a speedy follow-up, but better now than never, I’d say! My hesitation was the awful photos — taken under harsh office lights, on a pine veneer table with disposable bridal shower plates. BUT, if you can get past the terrible composition, I’ll just tell you that these truffles are out of this world.

Every. Single. Person. that tried them raved and raved and raved. The truth is, they’re simple as can be to make, and a total diversion from the kinds of recipes I normally make, but I’ll admit that I loved just as much as everyone else. They are seriously addicting. But that makes sense, right? What’s not to love about boxed cake mix, Oreo cookies, cream cheese and sprinkles? Nothing, that’s what. Absolutely nothing!

These little truffles are an absolute breeze to make, and you could easily customize the sprinkles colors to tailor them to your event. Had I known the bride-to-be we were celebrating had a red and black color scheme for her wedding, I may have bought only red and black sprinkles, but I loved the colorful nature of these made with the rainbow sprinkles. Super cheery and fun! They’re the perfect thing for a shower of any kind – baby, bridal – because they’re bite-sized, easy, adorable, and mess-free.

You could swap in your favorite cake batter flavor here, though to keep them a blonde color, you’ll have to stick to yellow, white, or funfetti mixes. That said, if chocolate is your thing (I’m so with you there), then you could just use regular Oreos and chocolate or Devil’s Food cake mix. So many options!

In other news, I just went strawberry picking last weekend, and came home with the most gorgeous, fragrant pint of fresh strawberries. The first berries of the season are always such a wonderful treat. Expect a more seasonal recipe using those very soon! 🙂

Cake Batter Truffles

Ingredients

  • 1 (8 ounce) package cream cheese, room temperature
  • 1 (15.5 ounce) package Golden Oreos
  • ½ cup yellow, white, or Funfetti cake mix
  • ¼ cup rainbow sprinkles
  • 1 (10 ounce) bag of white candy melts
  • Sprinkles, for decoration (optional)

Directions

  1. In a food processor, grind cookies until they are uniformly ground into a fine powder.
  2. In a large bowl, mix together the cream cheese, cake mix, sprinkles, and Oreo crumbs until no white streaks of cream cheese remain.
  3. Shape the batter into about 40 tablespoon-sized balls. Place in the refrigerator for at least 45 minutes. They can be refrigerated up to overnight.
  4. When ready to coat, line a baking sheet with parchment paper and set aside. Melt your candy melts according to the directions on the package, and dip each truffle one by one. Place on your parchment-lined baking sheet, and sprinkle with remaining sprinkles right away, as the candy coating sets quickly.
  5. When finished, keep refrigerated in an air-tight container. The won't last long -- I promise.
